Chicken Pasta in Red Sauce

I generally don’t like pasta which we get in hotels. They seem too plain to me. I like pasta to be bursting with flavor, vegetables and meat. This chicken pasta is a perfect example of that.

Inspired by the amazing Pasta in Tomato sauce recipe from Padhu’s Kitchen, I made a variation of it with chicken. This makes a delicious lunch or dinner and my family loves it.

I used Spiralli pasta while making this. You can make this recipe with any variation of pasta you like.

Chicken Pasta in Red Sauce
Ingredients

  • 250 gms pasta (I used Del Monte Spiralli pasta)
  • 1.5 litres water
  • salt
  • Grated parmesan cheese for garnishing

Chicken

  • 250 gms chicken
  • 1 teaspoon vinegar
  • 1/2 teaspoon turmeric
  • 1 teaspoon pepper powder
  • salt
  • 1 teaspoon ginger garlic paste

Sauce

  • 4 -5 Ripe tomatoes
  • 1 finely chopped onion
  • 2 tablespoon minced garlic
  • 1 1/2 tablespoon olive oil
  • salt
  • black pepper powder
  • 2 tbsp Tomato ketchup
  • 1/2 teaspoon oregano powder

 Vegetables

  • 1 onion
  • 1 tablespoon garlic
  • 1 green capsicum
  • 1 yellow capsicum (optional)
  • 1 red capsicum (optional)
  • 1/2 cup olives
  • Salt
  • Black pepper powder
  • Oregano powder
  • 1 1/2 tablespoon olive oil

Method

Clean and marinate the chicken with the ingredients listed under Chicken and keep aside for half an hour.

Cook the chicken in pan for 20 minutes. Shred the chicken and keep aside.

Cooking the Pasta

Take 1.5 litre water in stove pot and bring to boil. Add the pasta and salt and keep boiling for 5 minutes. Bring to simmer for 10 minutes or till pasta is cooked. It should be tender yet firm. Strain the pasta and run cool water through it. This keeps the pasta from sticking.

Making the sauce

For the sauce, put tomatoes in boiling water and keep it closed for 5 minutes. Remove the skin and puree it in a blender.

Heat oil, fry garlic and onion till they become soft.

Add tomato puree, tomato ketchup and cook until the sauce is boiling, then reduce heat and simmer for another 10 minutes. Add oregano, salt and pepper powder.

Vegetable Stir fry

Heat olive oil, add finely chopped onion and garlic and saute till onions become light pink.

Add capsicum and cook for a few minutes in high flame.Keep stirring it continuously. Do not over cook.The vegetables should be crisp. Then add olives and stir for 1 minute.

Then sprinkle a little oregano, add salt and pepper powder to taste.

Mixing it all together

Add shredded chicken, vegetables and cooked pasta to the prepared sauce, toss it well, garnish with grated parmesan cheese and serve.
