Beans Thoran

One of the simplest and healthy vegetable dishes to make, beans thoran is my go to dish when I want to have a meal ready in half an hour. The only thing which takes time is the cutting of the beans. If you want to make this dish in the morning, then you can cut the beans the night before and keep in the fridge, so that it will be quicker to make the dish.

Beans Thoran
Ingredients

  • 500 gms beans
  • 1/2 cup grated coconut (depending on your preference for coconut)
  • 1 chopped onion
  • 1 tbsp finely chopped or crushed garlic
  • 2 – 3 green chillies
  • 1 dried red chilly
  • 1 tsp turmeric powder
  • 1/4 tsp chilli powder (optional)
  • curry leaves
  • 1 tsp mustard seeds
  • salt
  • oil

Method

Heat oil in a pan and sputter mustard seeds in it. Add curry leaves and saute for a minute. Add chopped onions and garlic and saute till soft. Then add sliced green chillies and sliced dried red chilly. Mix well and saute for 1 minute.

Add the grated coconut and saute till the nice smell of dried coconut comes.

Add the masala powders (turmeric and chilli powder) and mix well.

Add the chopped beans and mix well.

Cover and cook for 15 minutes till the colour of the beans become dullish green. Add salt to taste.

Delicious beans thoran is ready.
