Egg and Toast Cup

So its time for breakfast again and you are tired of all the standard stuff you eat for breakfast. This egg and toast cup is a new twist on the eggs and toast which is delicious and it needs only 2 main ingredients and one oven.

The best part of this recipe is that while it is baking you can go do other stuff like reading a newspaper or making tea. Recipe adapted from here.

Ingredients

  • 4 slices bread
  • 3 eggs
  • salt
  • pepper
  • cheese (optional)
  • oil / butter / ghee for greasing baking pan

Method

Preheat the oven to 180 degree Celsius. Grease 3 rounds in a muffin tray.

Use a cup and knife, cut the middle of the bread into a round circle. Roll each bread circle using a rolling pin and then cut into half.

Place one half into a round in the muffin tray and then the other such that they cover the whole round. Cover any gaps using bread pieces.

Brush some butter onto the bread pieces. Put some grated cheese on top of the bread. Then break an egg over it. Wipe off any excess liquid which might have spilled over. Season with salt and pepper. Fill the remaining two rounds in the same way.

Bake in oven for about 20 minutes.
