Baked Orange Ginger Fish with Stir Fry Vegetables

My adventures with baked fish continue and my latest is this orange-ginger fish. I found this recipe at Light Orange Bean and adapted it for my tastes. The original recipe called for Brussel sprouts but I made stir fry vegetables. The combination came out very well.

This dish is very easy to make once the cleaning and marination of the fish is done. So you can prep the fish earlier and then cook it at lunch or dinner time quickly.

Baked Orange FIsh
Ingredients

  • 400 gms fish fillets ( We used King fish)

Marination 

  • 3 tbsp orange juice
  • 1 tbsp lemon juice
  • 2 cloves garlic, crushed
  • 1 tbsp crushed ginger
  • 1 tbsp soya sauce
  • 1/4 tsp salt
  • 1/2 tsp black pepper powder

Stir Fry Vegetables

  • 2 potatoes
  • 1 yellow capsicum
  • 1 red capsicum
  • 1 green capsicum
  • 1 onion

Method

Clean the fish fillets and keep aside. Mix the marination ingredients and pour over the fillets. Refrigerate for at least 20 minutes.

Preheat oven to 210 degree Celcius.

Add the fillets to a baking dish. Cover with aluminium foil and bake for 10 minutes. Then remove the foil and cook for 10 minutes more. Take out the fish and keep aside.

Cut the potatoes into long vertical thick strips like french fries. Similarly, cut the capsicums and onion into vertical strips.

Heat oil in a pan and fry the potatoes for 3 minutes.

Then take them out and keep aside. In the same oil, saute the sliced onions till mild brown. Then add the sliced capsicums and stir fry for 3 minutes.

Then add back the potatoes and mix well. Add salt and pepper to taste. Cover and cook for 3 – 5 minutes.

Serve hot with the fish fillets.
