Egg Curry

Egg curry is basically boiled eggs in curry base. It can be made in different styles and this in one of my favorite and easiest and can be made in under 30 minutes.

My dinner today was egg curry and chappathi. This is one of the quick meals to make and liked by all in our family.

Ingredients

  • 3 eggs
  • 1 tbsp crushed ginger
  • 1 tbsp crushed garlic
  • 2 green chillies
  • 2 finely sliced onions
  • 1 chopped tomato
  • oil
  • salt
  • 1/2 cup water
  • curry leaves

Masala Paste

  • 1/2 tbsp chilli powder
  • 1 1/2 tbsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala

Method

Boil the eggs for 5 minutes and keep aside.

Mix turmeric, chilli, coriander and garam masala powders with a little oil to make paste.

Heat oil in pan and add curry leaves. Then add crushed ginger, garlic and sliced green chillies. Add onions and saute till brown.

Add the masala paste and stir till oil appears. Then add the chopped tomato and salt and cook. When they are cooked, add water and cover for 3 minutes. Then uncover and cook till gravy is thick. Then add boiled eggs and serve hot with rice or chappathi.
