Kuzhi Paniyaram

Kuzhi paniyaram is a Tamil dish made by steaming Idli batter in special paniyaram mould / chatti. This is my standard tea time snack to make with leftover Idli batter.

I had these the first time in a buffet and the next day went and bought the chatti to make these delicious paniyarams at home. For me they combine the best of idli and dosas. They are soft like Idlies on the inside and crisp like dosas on the outside.

My son absolutely loves them. This is a picture of him grabbing some paniyaram off the plate.

Ingredients

  • 2 cups dosa batter
  • 1 finely chopped carrot
  • 1 finely chopped onion
  • 1 finely chopped green chilly
  • 1/2 cup cashew nuts
  • coriander leaves
  • mustard seeds
  • salt
  • oil

Method

Add water to the batter and mix till it is the consistency for dosas. Add salt to taste and keep aside.

Heat oil in a pan and sputter mustard seeds. Then add finely chopped onions and green chilly and saute till soft.

Then add chopped carrot and mix well. Lower heat, cover and cook for 5 minutes. Then add it to the batter.

In the same oil, add the cashew nuts and saute till light brown. Add these too to the batter.

Place the paniyaram chatti on heat and add a drop of oil to each round. Then add batter to each round such that it is 3/4 full. You can add a little bit of oil to the sides of each round, if needed. Let it cook for 3 – 5 minutes.

Using a fork, turn them around gently. Then let it cook till both sides are light brown in color.

Using the fork, take them out of the chatti and serve hot with chutney. With this recipe you can make about 20 small paniyarams.
