Chicken Pasta in red sauce

Inspired by the amazing Pasta in Tomato sauce recipe from Padhus Kitchen, I made a variation of it with chicken. So here is the recipe.

Serves 2.



  • 250 gms pasta (I used Del Monte Spiralli pasta)
  • 1.5 litres water
  • salt
  • Grated parmesan cheese for garnishing


  • 250 gms chicken
  • 1 teaspoon vinegar
  • 1/2 teaspoon turmeric
  • 1 teaspoon pepper powder
  • salt
  • 1 teaspoon ginger garlic paste


  • 4 -5 Ripe tomatoes
  • 1 finely chopped onion
  • 2 tablespoon minced garlic
  • 1 1/2 tablespoon olive oil
  • salt
  • black pepper powder
  • 2 tbsp Tomato ketchep
  • 1/2 teaspoon oregano powder


  • 1 onion
  • 1 tablespoon garlic
  • 1 green capsicum
  • 1 yellow capsicum (optional)
  • 1 red capsicum (optional)
  • 1/2 cup olives
  • Salt
  • Black pepper powder
  • Oregano powder
  • 1 1/2 tablespoon olive oil


Clean and marinate the chicken with the ingredients listed under Chicken and keep aside for half an hour.

Take 1.5 litres water in stove pot and bring to boil. Add the pasta and salt and keep boiling for 5 minutes. Bring to simmer for 10 minutes or till pasta is cooked. It should be tender yet firm.

For the sauce, put tomatoes in boiling water and keep it closed for 5 minutes. Remove the skin and puree it in a blender.

Heat oil, fry garlic and onion till they become soft.

Add tomato puree, tomato ketchup and cook until the sauce is boiling, then reduce heat and simmer for another 10 minutes. Add oregano, salt and pepper powder.

Heat olive oil, add finely chopped onion and garlic and saute till onions become light pink.

Add capsicum and cook for a few minutes in high flame.Keep stirring it continuously. Do not over cook.The vegetables should be crisp. Then add olives and stir for 1 minute.

Then sprinkle a little oregano, add salt and pepper powder to taste.

Cook the chicken in pan for 20 minutes. Shred the chicken and keep aside.

Add shredded chicken, sauteed vegetables and cooked pasta to the prepared sauce, toss it well, garnish with grated parmesan cheese and serve.
